A fish older than the dinosaurs, brought to the edge and then back by the industry that nearly ended it. What ethical caviar actually means today.

The sturgeon was swimming before flowers existed. Around 200 million years ago, in the rivers of the early Jurassic, a fish appeared with a cartilaginous skeleton, five rows of bony plates instead of scales, and a snout hung with four barbels for reading the riverbed in the dark. It has barely changed since.

It survived the extinction that took the dinosaurs. It survived every ice age that followed. Then, in the space of roughly seventy years, it very nearly did not survive us.

Understanding that story is the difference between eating caviar and knowing what you are eating.

Twenty-seven species, one shared problem

There are twenty-seven recognised sturgeon and paddlefish species. The International Union for Conservation of Nature classifies sturgeon as the most critically endangered group of species on Earth. Not the most endangered fish. The most endangered group of anything.

The four you will meet on a tasting table:

Beluga (Huso huso) is the giant. Historic records describe fish over five metres and more than a tonne. It is also the slowest to mature, with females first producing roe at fifteen to twenty years, and it is the species that took the hardest fall.

Oscietra (Acipenser gueldenstaedtii) matures at twelve to fifteen years and offers the widest range of expression of any sturgeon, from deep bronze to gold.

Sevruga (Acipenser stellatus), the stellate sturgeon, is smaller and quicker, mature at seven to ten years, with a long pointed snout and a more assertive roe.

Siberian Baerii (Acipenser baerii) matures fastest of the four, at six to eight years. That speed is precisely why it became the backbone of responsible aquaculture.

What went wrong, in one paragraph

The Caspian Sea held roughly ninety percent of the world's wild sturgeon. Through most of the twentieth century, catch was managed, if imperfectly, under a single state authority. When the Soviet Union dissolved in 1991, that authority fragmented across five coastal states overnight, and enforcement collapsed with it. Poaching became an industry. At the same time, dams on the Volga and the Ural closed off the spawning grounds the fish had returned to for millennia, and a sturgeon that cannot reach gravel cannot reproduce. Between 1985 and 2005, wild Caspian sturgeon populations fell by more than ninety percent.

The slow clock

Every difficulty in sturgeon conservation traces back to one biological fact: this fish keeps time badly by our standards.

A Beluga female does not spawn until she is fifteen or older. She does not spawn every year afterwards, but every three to five. If she is caught before she has ever bred, which for a slow-maturing species is statistically likely under heavy fishing pressure, the population loses not one fish but every descendant she would have had.

Compare that with a herring, mature in three years and spawning annually. You can overfish a herring population and see it recover in a decade. Overfish a Beluga population and the recovery is measured in human generations.

This is why a wild-caught Beluga tin, if you ever see one offered, is not a delicacy. It is arithmetic working against a species that cannot afford it.

The spawning cycle: river, roe, return

What CITES changed

In 1998, all sturgeon species were listed under CITES, the Convention on International Trade in Endangered Species. Every gram of caviar crossing a border since then has been required to carry a universal labelling code identifying species, source, country, harvest year, processing plant and lot.

In 2006 CITES suspended most wild Caspian caviar exports outright. The commercial trade in wild Beluga has never meaningfully returned, and in most markets, including the United States, importing wild Beluga is simply illegal.

The effect was not subtle. An industry built entirely on wild capture had to become an industry built on farming, in about a decade, or stop existing.

Aquaculture, and the honest version of the story

Sturgeon farming is not a marketing gesture. Today, essentially all legally traded caviar comes from aquaculture, produced in France, Italy, Germany, Poland, Israel, Uruguay, the United States, China and elsewhere.

It works like this. Broodstock are raised in controlled freshwater systems, often for a decade or more before the first harvest. Sex is determined by ultrasound at two to three years, because roughly half of any cohort is male and will never produce roe. Maturity is monitored by biopsy: a small sample of eggs assessed for the polarisation index, which indicates whether the roe has reached the stage where texture and flavour are at their peak. Get it wrong by a season in either direction and a decade of feeding is wasted.

What this means practically:

  • Traceability is real. A farmed tin can be traced to a pond, a cohort and a harvest date. Wild caviar never could.
  • The wild population gets left alone. Farmed supply removes the commercial incentive that drove the poaching.
  • Some farms restock rivers. A number of producers release juveniles into the Danube, the Volga and the Rhine as part of recovery programmes.
  • It is slow and capital-intensive, which is the single biggest reason good caviar costs what it does. You are paying for ten to fifteen years of feed, water, oxygen, veterinary care and patience before anyone sees a return.

No-kill caviar: what it is and where it stands

You will increasingly see "no-kill", "cruelty-free" or "milked" caviar. The technique induces ovulation hormonally and expresses the roe through massage, leaving the female alive to produce again.

It is genuine, and it is worth understanding rather than either dismissing or overselling.

The case for it: the fish survives, and a single female can be harvested repeatedly across her life rather than once.

The case against, or at least the caveats: the eggs must be processed within a very short window after release or the membrane weakens, the resulting texture is often softer than tin-cured roe from a conventional harvest, yields per fish are lower, and the hormonal intervention is itself a form of handling stress. Producers who do it well produce something excellent. Producers who do it as a label produce something soft.

Our position is straightforward: it is a legitimate method, not automatically a superior product, and it should be judged on the tin like anything else.

How to buy in a way that means something

Six practical checks.

  1. Read the source code. In the CITES string, C means captive-bred. That is what you want. W means wild, and on a modern Beluga tin it warrants a hard question.
  2. Ask for the farm, not the brand. A house that knows its producer will name it.
  3. Check the harvest year. Current or previous season for fresh malossol.
  4. Be suspicious of a bargain Beluga. Fifteen years of husbandry has a floor price. Anything far below it came from somewhere you would rather it had not.
  5. Consider Baerii deliberately, not as a compromise. A six-year fish farmed well produces genuinely fine roe at a fraction of the environmental and financial cost of a twenty-year one. Choosing it is not settling.
  6. Buy less, more often. A 30 gram tin eaten at its peak is a better experience and a better decision than a 125 gram tin opened twice.

What is actually happening to the wild fish

Honestly: it is mixed, and it is early.

Wild Caspian stocks remain critically endangered and are not recovering at any speed worth celebrating. Dams still block the spawning runs, and no trade ban removes a dam.

But restocking programmes on the Danube and the Volga have put millions of juveniles back into the rivers, and there are now confirmed observations of naturally spawning sturgeon in stretches of the Danube where they had disappeared. The Atlantic sturgeon in North America and the European sturgeon in the Gironde are both under active recovery programmes with measurable results.

A fish that measures its life in decades will measure its recovery in decades too. The trajectory has changed. The destination is a long way off.


The point of all this

Caviar is now one of the rare luxuries where the responsible version and the excellent version are the same version. The farm that invests fifteen years in a Beluga is the farm that harvests it at the right moment. The producer who can name the pond is the producer who controlled the cold chain.

Eating this well and eating it responsibly stopped being a trade-off some time ago. It is worth knowing that, and it is worth asking for.
